CULA 1202 - NUTRITION AND MENU PLANNING
This course is designed to provide the most accurate and current nutritional information for culinary professionals to use in analyzing recipes, evaluating and modifying menus, and responding to customer needs. Topics include characteristics of the major nutrients, how to maximize nutrient retention in food preparation, applying the principles of nutrition throughout the life cycle, recipe development and menu design.
