CULA 2207 - PROFESSIONAL PASTRY PRINCIPLES
PREREQUISITE: CULA 2201 or consent of dean. This course provides advanced instruction in the art of professional pastry techniques. Advanced baking skills used in restaurants, hotels, resorts and specialty bakeries which feature signature desserts will be studied. Students will develop skills in the production and use of laminated dough, chocolate artistry, basic sugar work, pastillage, candies, frozen confections, dessert sauces and presentation, cold souffles, advanced cake decorating and wedding cakes, marzipan and edible confection centerpieces.

Description Prerequisite: CULA 1201, CULA 2201
Advanced instruction in the art of professional pastry techniques. Picking up from where Professional Baking Techniques left off, this course takes the student further into the study and practice of special event and contemporary cakes, sugar work, pastillage, rolled fondant, and the use of gum paste for decoration. Chocolate will be studied in depth, including the creation of candies and sculptural forms. The course will conclude with advanced practice in plated contemporary desserts utilizing various cooking and baking methods, while balancing several design elements.
