CULA 2210 - RESTAURANT PRODUCTION DESSERTS
Prerequisite: CULA 2201, CULA 2207 or currently enrolled.
This is a capstone class designed to utilize and strengthen learned skills needed in the preparation of signature desserts in ala carte and volume production. Students will focus on complex classical and modern plated desserts, their creation and concepts. Both hot and cold desserts and novel decorating techniques will be covered, as well as how to mise en place a pastry station in a kitchen to prepare desserts to order. Additional topics include identifying and pairing contemporary flavors and textures, garnishing and presentation principles, dessert sauce preparation and painting, use of equipment, and production procedures.

LL Lecture Lab
Description Prerequisite: CULA 2201; may be taken concurrently with CULA 2207
Restaurant Production Desserts introduces the learner to the skills and planning involved in producing plated desserts in large quantity. Working with various creams, cakes, and fillings, learners will plan and implement large scale dessert projects for use in the culinary arts dining room. Learners will investigate further into traditional dessert principles, hot desserts, cold and frozen desserts, and classical flavor combinations. Garnishing principles and dessert sauce preparation are investigated in detail, with final dessert assemble and service an end result of the efforts of the class group.
